In simple terms, twisting the pairs keeps them close together, the pairs that are twisted are used in conjunction at each end to make an outward and return path to one part of the equipment. Any external magnetic fields (mains cables etc) must cross both cables at the same time, so the interference created in one cable is cancelled by the almost exact opposite amount of interference in the other. There are limitations to this, a long run of cable parallel to a heavily loaded mains cable will create a build up of interference from one pair to another pair, and this can be a problem, but for safety they should never be run close to mains for any distance for safety reasons anyway.
